The Blessings of Sado Island

Sado Island, home to the Sado Island Gold Mines World Heritage site, was born from tectonic activity about 3 million years ago, and even now is full of magnificent nature including the Osado Ishina Natural Cedar Forest. As the winter snow melts, it carries nutrients from the fertile soil, down the Shinano River, Agano River, and rivers throughout Sado into the sea which allow plankton to grow plentifully and delicious seafood to thrive.

~Using Nature's Refrigerator for Aged Deliciousness~

Since long ago, the people of Niigata would gather winter's snow into a hole dug in the ground and cover it with rice straw or other materials to make a "yukimuro," or "snow cellar" to keep perishable foods chilled. This is the wisdom of Snow Country, passed down since the Edo Period. The intense winter's snow could last in the yukimuro until at least the following autumn, insulated like a snow hut to maintain a low temperature of 1〜2℃ and high humidity of over 90%. Foods aged in that environment develop sweetness, softness and deliciousness.

    Unlike a regular refrigerator, yukimuro do not have any of the sound or vibrations of motors, allowing food items to be aged stress-free.

    Yukimuro use natural power (clean energy) without relying on electrical power.
  • Stable Environment
    An average refrigerator has a motor that cycles on and off to maintain a temperature between -1〜10℃ and humidity widely ranging between 30〜99%. Meanwhile, yukimuro are able to maintain 1〜2℃ and over 90% humidity year-round, allowing for a stable aging environment.
